USWhile visiting friends, in Asheville, we made a small dinner party featuring venison ****. We did the ***** sous vide at 115 F for 2.5 hours, then reverse seared them. After cutting the ***** into 2.5 inch thick medallions, we plated them on a bed of wild rice with roasted carrot sticks and creamed spinach. Most delicious.
